CHINESE GOURMET

Since we got home from Hawaii we have had frozen pizza, bread n' cheese, and 5 minute Alfredo pasta for dinner. Am I just a terrible wife or what? My family will probably be extra lucky to get one home cooked meal per week - haha. I sure hope that doesn't happen... Someday when I am a stay at home mom I will have hours and hours to fine tune my cooking, embellish my darling little home with cute decor, and joyfully play with my adorable, angel children. In. My. Dreams. I'm not stupid. I've seen how tiring it is to be one of those not-so-perfect, stay-at-home moms. 

So, Thursday I figured I probably better whip out my cooking skills and make some real food - before all the veggies went rotten of course. I absolutely love cooking but let's be honest I'm extremely slow! I'm talking 3 or 4 hours of straight cooking - not the best multi-tasker when it come to food. So, I usually only get the chance to cook over the weekends, when I actually have time (or maybe I'm just lazy... who knows!) I picked about 5 different recipes, some from the neighborhood cookbook others from Pinterest or allrecipes.com, and ended up kind of mixing them all together to create this gourmet Chinese dinner - Sweet n' Sour Chicken on white rice with a side of Pork Lo Mein. I usually always follow a recipe to exactness, that way I can blame the recipe when it doesn't turn out so good :), but last night I put my skills to the test! And you know what, it came out pretty dang delicious. 

Landon sat in the living room on his laptop and periodically asked if I needed any help. I said Nope, but if you are hungry, you better eat a snack - this could take a while. He also laughed when he heard the clicking of my camera and said Are you taking pictures of your food again? So I was a little proud of myself, I needed to document this. Besides food makes for a great photography subject! You put it where you want it and it stays put. Amazing. When I told him to come eat, he asked if I had taken pictures of his plate yet so he was safe to eat it now - haha. He knows me too well. 

We're college students so of course my kitchen is pretty tiny, but I make it work. Every inch of counter space in use along with the tops of the washer and dryer. It's comparable to some psychotic scientist's laboratory. My main concern was just to not let anything burn. All through dinner, Landon was moaning with delight. He will honestly eat anything, but I liked seeing him enjoy this meal so thoroughly. 

And what always follows a big fancy meal? Lots of leftovers, yes, along with an overflowing sink of dirty dishes - which of course is Lando's job. Happy scrubbing! :)
